Dr. Eric Ellingson on Gluten-Free Bread News Story

It has been widely reported in the local news that the owner of Great Specialty Products, a Durham, NC company, was arrested on charges of fraud for selling gluten-free bread.  Gluten is a special type of protein that is commonly found in rye, wheat, and barley. Therefore, gluten is found in most types of cereals and in many types of bread. According to WRAL news, numerous people who bought products from Great Specialty at the 2009 State Fair or ordered items from the company’s Web site have complained of allergic reactions after eating the products. The state Department of Agriculture and Consumer Services, which pursued the criminal charges, said tests of the bread showed high levels of gluten.

Gluten allergies and many other food allergies are common. Often times the only option people suffering from food allergies have is to avoid them. However, our goal at BioVeda of Durham is for patients to have a high quality of life and avoidance of allergens is not an acceptable solution.  Utilizing the BAX 3000, we are able to assess patients’ response to common allergens, environmental substances and foods down to the molecular level.  The assessment portion of the therapy is faster, safer, completely non-invasive and has a higher degree of specificity than blood tests or skin scratch tests.  Following assessment, we use LASER or Light and Sound Energy Relaxation therapy to condition the patient to react normally to these otherwise harmless substances.  Our philosophy is not to avoid known allergens but to provide an effective method of therapy that can help alleviate numerous autoimmune related conditions including seasonal allergies, food allergies, environmental allergies, asthma, skin conditions such as eczema, rosacea and psoriasis as well as childhood neurological disorders such as ADD, ADHD and even Autism.
